1. Buy a couple big fish – it’s best to buy wild fish if you don’t want to get a build up of toxins like mercury. We used wild trout from Lapland. Well, maybe it wasn’t trout.
2. Open the fish up and rub the insides with salt and pepper.
3. Rub the outside with salt and pepper.
4. Cover a baking dish with butter and put the fish in.
5. Bake at 185 C. for 45 minutes, or until the fish flakes apart.
