Roasted poblano
You will like this tech- nique for many Mexican dishes. 1. Place a fresh poblano pepper over an open flame (probably best on the bbq, but ok on a gas stove). 2. Rotate the pepper till it’s nicely charred. 3. Put the pepper(s) in a paper bag for 20 minutes to steam. 4. Remove the pepper from the bag and scrape off the charred part. 5.
